Workshop: The Art & Science of Gelato
📅 On Tuesday, October 24, the workshop “THE ART & SCIENCE OF GELATO” was successfully held, with the sponsorship of TIM Corp, Iceteam 1927, and the Food Technology Department.
🍦 Not only is Gelato a dessert, but it’s also referred to as the “national dish” of Italian cooking since it uses only the best, freshest ingredients that provide a complete, balanced diet. In addition, Gelato is made using cutting-edge technology, making it a tasty, unique, and harmonious product in addition to being nutrient-dense.
During the workshop, students were instructed on
✅ Differences between Gelato and ordinary ice creams.
✅ Ingredients and production line of Gelato.
✅ The importance of pasteurization, rapid freezing, and preservation technology for Gelato.
✅ Balance of Gelato’s components: how one component could interact and drive the behavior of others. For example, stabilizers and emulsifiers, despite only presenting a very small amount in the recipe (~1%), contribute greatly to the harmony and structure of a perfect Gelato.
✅ Listen to the inspirational story in the field of product research and development that Mr. Vu, founder of TIM Corp, expressed very closely to the students.
🎓 Also on the same morning, 16 excellent students had the chance to participate in a professional Gelato training program. An internationally valid certificate, nominated by International University and TIM Corp was awarded to each trainee. The training demonstrated valuable academic knowledge and practical techniques to prepare the top-notch Italian-quality Gelato.
